Mini Spinach Lasagna Roll Ups

What a fun lunch with little ones! Whole wheat or gluten-free pasta, (massaged) kale in place of spinach ... they won't even know it's good for them! Use organic cheese, shred it yourself (even Organic Valley pre-shredded has cellulose in it -- don't eat that, look it up). Yummy!

Ingredients:

  • 8 lasagna noodles, cooked
  • 1 (10 ounce) package Green Giant frozen chopped spinach, thawed and well drained
  • 1 (15 ounce) container ricotta
  • 1/2 cup Parmesan cheese
  • 1 egg
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon Italian seasonings
  • if salt and pepper, desired
  • 1 (15 ounce) can Muir Glen organic pizza sauce
  • 1 cup shredded mozzarella cheese
